One Pan Honey Mustard Chicken And Potatoes

Nothing is cheaper and cozier than potatoes and chicken. Let’s take it up a notch with a sweet and savory honey mustard sauce.

Start with skin-on and bone-in chicken thighs seasoned with salt and pepper. Cook them in a hot pan, skin side down, to get a beautiful crisp on the skin. Flip the chicken and allow it to cook for another 5 minutes. Set the chicken aside.

Cut up a small bag of baby potatoes or fingerling potatoes and season with olive oil, salt, pepper, onion powder, garlic powder, and parsley. Toss into the same pan where the chicken was cooked and cook for 5 minutes.

Make the honey mustard sauce. Begin with three tablespoons of whole grain mustard, three tablespoons of Dijon mustard, three tablespoons of honey, and one teaspoon of olive oil. Whisk together in a small bowl and add a dash of crushed pepper flakes and parsley.

Place the chicken back into the pan and pour over the sauce. Cover and let cook until the chicken is at 165 degrees.

One Pot Creamy Lemon Chicken And Wild Rice

In a heavy-bottom Dutch oven, place a tablespoon of olive oil and sear the seasoned skin-on and bone-in chicken thighs in batches until the skin is nice and crispy. Flip and allow to cook another 5 minutes before setting to the side.

In the same pot, add onion, garlic, and white wine to deglaze and remove those flavorful brown bits of chicken. Pour in chicken broth, the zest and juice of one lemon, and heavy cream.

Add the wild rice and the chicken, place a few lemon slices on top, and bake in the oven at 450 degrees until the rice is tender and the chicken reaches 165 degrees.

One Pan Lemon Parmesan Chicken With Asparagus

Season thinly sliced chicken breasts with salt, pepper, onion powder, garlic powder, and parsley. Drizzle with olive oil and dip lightly into seasoned bread crumbs. Place in the center of a lined baking sheet. Sprinkle over the juice of one lemon, followed by shaved parmesan cheese.

Cut the ends off fresh asparagus and place it on either side of the chicken. Drizzle with olive oil, salt, pepper, and the zest of one lemon. Place a few slices of butter over the asparagus and the chicken and bake at 450 degrees until the asparagus is tender and the chicken has reached a minimum temperature of 165 degrees.
